to Asia
Come join our two-part series
for a culinary journey to Asia.
This is a two-week class.
Series I - Chinese Cuisine
Learn and experience many different Asian regional cuisines- from Southern China’s rice dishes, Chicken Lettuce Wrap to mid-western region’s spicy food, such as Mapo Tofu, Kung Pao Chicken to Northern region’s steamed meat buns and dumplings. Learn many different cooking techniques- whether it is to stir fry, to steam, to braise, etc.

Series II - Japanese Cuisine
From this session, you will learn how to prepare the most popular Japanese restaurant entrée dishes, such as teriyaki chicken, tofu, salmon and beef. You will learn an authentic teriyaki sauce from a recipe used in Kyoto, Japan. Besides entrees, there will also be popular appetizer dishes; shrimp, chicken, and vegetable tempura, agedashi tofu, chicken karaage.

Instructor: Lily You was born and raised in Taiwan and grew up exposed to many Chinese regional food cultures. She experienced Japanese cooking with her mother who was born and educated in Japan. She eventually settled in Vancouver Canada, where she owned restaurants. She has also taught high school culinary arts.

Cooking with Trader Joe's

You’ve found all the unique items at your favorite store. Now, what can you do with them? Our chefs will answer your questions about TJ’s new products and help you create interesting, healthful meals using them plus seasonal ingredients. The menu will be determined by the instructor based on what is new and fresh at Trader Joe’s. Due to the popularity of this class, we will offer two sessions. The same recipes will be featured; sign up for only one of these sessions.

Instructors: Lisa Scott and T.J. Tramonto. Lisa Scott is a personal chef who has a B.S. in Food, Nutrition, and Dietetics. She has been teaching cooking classes at the adult school for sinc 2003. T.J. Tramonto is a graduate of Westlake Culinary Institute and a professional caterer.

It’s not just for breakfast anymore. America is obsessed with all things coffee and it has found its way into every corner of the kitchen. We’ll use the daily grind for breakfast, a tasty complement for meat and poultry and, of course, desserts. Along the way we’ll give you some facts and trivia that will add new dimension to this brew.

Nutritional Lifestyle Choices

When it comes to eating well, information is power. Learn the basics about the important macronutrients - Protein, Fat and Carbohydrates - and how they function within popular eating choices. The class covers the differences between Vegetarian and Vegan, what is included in the Paleo style of eating compared to the Mediterranean style, concerns with eating completely raw food, and gluten free strategies. Resources and recipes for all are included.

Instructor: Risa Potters, D.C., is a Nutritionist and Licensed Chiropractor who has helped hundreds of people heal illnesses and autoimmune conditions using real food and knowledge of healthy eating. She is also an organic gardener and real food advocate who supports the slow food movement.

Fermented Foods
This interactive class will teach you how to make sauerkraut, kimchi, kombucha and sourdough bread. We will prepare these international delicacies and discuss the health and nutritional benefits of fermented foods. You will learn the science behind fermented foods and understand why and how cultures have been fermenting for centuries.

Instructor: Paul Hudak teaches organic gardening, cooking, health and nutrition at a local school. As a lifelong fermenter, Paul has taught many fermentation workshops and classes at area schools including Occidental College.

Handmade Italian Classics with a Modern Twist: Fresh Pasta & Sauces from Scratch
 
Always wanted to make fresh pasta in your own kitchen? In this class you will learn how to prepare 3 different pasta dishes from scratch. We will use traditional Italian recipes to make the dough and then roll out world class pastas and sauces to pair with them. We will make butternut squash ravioli with a butter sage sauce. Next we will hand crank fresh linguini to go with our home made pesto. Finally we will twist out tortellini that will pair with a home made garlic tomato sauce. Buon appetito!
