Cooking with Trader Joe's

You’ve found all the unique items at your favorite store. Now, what can you do with them? Our chefs will answer your questions about Trader Joe's new products and help you create interesting, healthful meals using them plus seasonal ingredients. The menu will be determined by the instructor based on what is new and fresh at Trader Joe’s. Due to the popularity of this class, we will offer two sessions. The same recipes will be featured; sign up for only one of these sessions.

Instructors: Lisa Scott and T.J. Tramonto. Lisa Scott is a personal chef with a B.S. in Food, Nutrition, and Dietetics. She has been teaching cooking classes at the Adult School since 2003. T.J. Tramonto is a graduate of Westlake Culinary Institute and a professional caterer.

Basic Techniques for Creative Cooking—
Poaching / Blanching / Steaming

This is the first in a series of demonstration classes designed to teach students some of the basic techniques needed to become knowledgeable and skillful home cooks. Bearing in mind that “basic” is not synonymous with “elementary”, cooks of all levels can benefit from this 4 part course. In this first class you will learn the correct way to poach chicken, seafood and fruit; how to blanch vegetables and maintain their color, and how to make perfect steamed cauliflower rice. We will make a colorful Chinese Chicken Salad, Potato Salad with Mustard Vinaigrette, Salmon with Cauliflower Rice and Poached Pears in Raspberry Sauce. Future classes will cover Roasting/Broiling/Baking; Sautéing/ Grilling/ Stir Frying and Deep Frying and Braising/Microwave/Pressure Cooking.

Instructor: Phyllis Vaccarelli is the former Director and owner of Let’s Get Cookin’ cooking school and current owner of the Culinary Concierge Connection. Phyllis has had years of experience teaching, developing recipes, and working with professional chefs, authors, and other instructors.

We will prepare these international delicacies and discuss the health and nutritional benefits of fermented foods. for Health & Vitality
If you want to take control of your health, the key is to cook the majority of your meals at home. Learn how to create consistently healthy meals for your family with no-fail planning tools. Recipes and shopping lists will be provided. We’ll prepare an easy dinner, explore how you can cook once and eat twice, and get the whole family involved. This class is naturally gluten free!

French Holiday Treats

Nutritional Lifestyle Choices
When it comes to eating well, information is power. Learn the basics about the important macronutrients - Protein, Fat and Carbohydrates - and how they function within popular eating choices. The class covers the differences between Vegetarian and Vegan, what is included in the Paleo style of eating compared to the Mediterranean style, concerns with eating completely raw food, and gluten free strategies. Resources and recipes for all are included.

Instructor: Risa Potters, D.C., is a Nutritionist and Licensed Chiropractor who has helped hundreds of people lose weight and heal illnesses like diabetes and autoimmune conditions through healthy eating. She is also an organic gardener and real food advocate who supports the slow food movement.

Autumn Chicken Entrees
With the holidays coming, there will be many opportunities to plan dinner parties. Chicken can always be a star entree and Phyllis will show you how to prepare it using different cooking methods and featuring dishes from different parts of the world. Recipes will include Chicken Saltimbocca Roulades with Prosciutto and Sage; Baked Green Chile Chicken Enchiladas with Avocado and Jalapeno Salsa; pressure cooked Moroccan Chicken with Preserved Lemon, Olives and Couscous and Chicken with Apples, Mushrooms and Calvados Cream Sauce. There will also be a special dessert.

Instructor: Phyllis Vaccarelli is the former owner and director of Let’s Get Cookin’ and the Westlake Culinary Institute. She now consults, teaches and writes for her new business, Culinary Concierge Connection.

Creating & Maintaining Good Cooking Habits with Dinner Meal Planning
Life seems to get busier by the minute and we tend to eat carelessly because of our whirlwind schedules. This class will help you to plan your dinner meals for 1 week (or a few weeks) at a time so you can eat well and not spend a huge amount of time preparing meals. We will prepare the following recipes together: Chef Steph’s Red Sauce, Chef Steph’s Pesto Sauce, Chicken and Zucchini En Paupiette with a White Wine Sauce, Roasted Salmon with Avocado Salsa, Ground Beef with Tomato Sauce and Spinach Stuffed Sweet Peppers.

Instructor: Stephanie Schurer graduated from the Academy of Culinary Education (ACE). She is a private chef, culinary instructor and product developer in the Ventura County.

Joy of Canning
This course is filled with everything you need to know to get started in canning your own foods. You will learn about the tradition of canning and preserving, how to get started, deciding what to can, the various methods used, including water bath, pressure canning and tools of the trade. Topics to be discussed will be food safety and holiday/hostess gift giving ideas.

Instructor Sharon Swearingen is a Master Food Preserver/Master Gardener with the University of California Cooperative Extension. She has taught in countless venues and has been judging the Preserved Foods entries at the Ventura County Fair for the last 29 years.
