Sushi 101
In this class, you will learn the type of sushi rice to choose and how to properly wash, cook, and add seasoning to the rice. Also, how to select locally grown vegetables, fish and organic eggs to make a variety of Sushi rolls, individual pieces of sushi, cone shape hand rolls, and family style Bara sushi (loose rice). Bonus recipe to go with the sushi - delicious Japanese Yuzu dressing for salad (citrus dressing).

Cooking with Trader Joe's

You’ve found all the unique items at your favorite store. Now, what can you do with them? Our chefs will answer your questions about TJ’s new products and help you create interesting, healthful meals using them plus seasonal ingredients. The menu will be determined by the instructor based on what is new and fresh at Trader Joe’s. Due to the popularity of this class, we will offer two sessions. The same recipes will be featured; sign up for only one of these sessions.

Instructors: Lisa Scott and T.J. Tramonto. Lisa Scott is a personal chef who has a B.S. in Food, Nutrition, and Dietetics. She has been teaching cooking classes at the Adult School since 2003. T.J. Tramonto is a graduate of Westlake Culinary Institute and a professional caterer.

This interactive class will teach you how to make sauerkraut, kimchi, kombucha and sourdough bread. We will prepare these international delicacies and discuss the health and nutritional benefits of fermented foods. You will learn the science behind fermented foods and understand why and how cultures have been fermenting for centuries.

Instructor: Paul Hudak teaches organic gardening, cooking and nutrition at an area school.

If you want to take control of your health, the key is to cook the majority of your meals at home. Learn how to create consistently healthy meals for your family with no-fail planning tools. Recipes and shopping lists will be provided. We’ll prepare an easy dinner, explore how you can cook once and eat twice, and get the whole family involved. This class is naturally gluten free!

Instructor: Molly Duncan is a graduate of the Culinary Institute of America and the Institute for Integrative Nutrition. She successfully manages her own autoimmune challenges solely through diet and exercise.

Nutritional Lifestyle Choices
When it comes to eating well, information is power. Learn the basics about the important macronutrients - Protein, Fat and Carbohydrates - and how they function within popular eating choices. The class covers the differences between Vegetarian and Vegan, what is included in the Paleo style of eating compared to the Mediterranean style, concerns with eating completely raw food, and gluten free strategies. Resources and recipes for all are included.

Instructor: Risa Potters, D.C., is a Nutritionist and Licensed Chiropractor who has helped hundreds of people heal illnesses and autoimmune conditions using real food and knowledge of healthy eating. She is also an organic gardener and real food advocate who supports the slow food movement.

Kitchen Herbalist
Looking for ways to spice up your recipes while improving your health? Herbs help digest our food, detoxify our bodies, and keep our hearts healthy and minds active. We’ll explore seasonal herbs, how to get the most out of them in recipes, medicinal applications, and ancient lore. Class will sample a variety of delicious and healthy recipes such as couscous filled lettuce wraps, exotic salads, a refreshing summer cooler, and more!

Instructor: Laura Pasetta is professionally trained in therapeutic herbal medicine. She owned a catering company specializing in women’s health and wellness retreats and produced her own DVD “How To Make A Healthy Lunch For Kids”.
