Cooking with Trader Joe's

You’ve found all the unique items at your favorite store. Now, what can you do with them? Our chefs will answer your questions about TJ’s new products and help you create interesting, healthful meals using them plus seasonal ingredients. The menu will be determined by the instructor based on what is new and fresh at Trader Joe’s. Due to the popularity of this class, we will offer two sessions. The same recipes will be featured; sign up for only one of these sessions.

We are increasingly aware of what we eat. Whether you follow Weight Watchers, South Beach or your own plan, we’d like to show you how to trim some of those fat grams and calories while emphasizing nutritional wholesomeness. It’s easier than you think with some sleight of hand and clever recipes using Trader Joe’s products.

Fun with
Fermented Foods
This interactive class will teach you how to make sauerkraut, kimchi, kombucha and sourdough bread. We will prepare these international delicacies and discuss the health and nutritional benefits of fermented foods. You will learn the science behind fermented foods and understand why and how cultures have been fermenting for centuries.

Instructor: Paul Hudak teaches organic gardening, cooking, health and nutrition at a local school. As a lifelong fermenter, Paul has taught many fermentation workshops and classes at area schools including Occidental College.

Nothing satisfies our craving for something sweet better than a slice of pie. This class will create the perfect pie crust for any pie. We will create a variety of shapes, filings and toppings for a perfect ending to a great meal or just a slice when the mood strikes!

Gluten Free 101
Learn how to make delicious, healthy gluten-free meals at home! In this class, we’ll prepare, cook, and eat a three-course gluten free gourmet dinner while learning about the science behind gluten and digestion. We’ll discover why eating a gluten free diet benefits so many with health problems, including those suffering from autoimmune diseases. We’ll explore how to shift to gluten free eating with ease, including reliable gluten free products, pitfalls to avoid, and how to create harmony in a house with both gluten free and non-gluten free eaters.

Instructor: Risa Potters, D.C., is a Nutritionist and Licensed Chiropractor who has helped hundreds of people heal illnesses and autoimmune conditions using real food and knowledge of healthy eating. She is also an organic gardener and real food advocate who supports the slow food movement.

Learn to make delicious gluten free versions of your favorite holiday cookies and a yule log. This class explores holiday baking, and it will set you up for gluten free baking success throughout the year. We’ll discuss gluten free baking versus traditional wheat flour baking, what ingredients are essential, and reliable baking mixes when you want something fast and easy.

Instructor: Molly Duncan is a graduate of the Culinary Institute of America and the Institute for Integrative Nutrition. She successfully manages her own autoimmune challenges solely through diet and exercise.

Entertaining Under Pressure
Phyllis’s menu will include Asparagus Soup with Wild Mushroom Cream; Beef Bourguignon; Celeriac Mashed Potatoes and Pumpkin Caramel Custards. These will all be done in the pressure cooker. There will also be a bonus Holiday Waldorf Salad.
