Cooking with Trader Joe's

You’ve found all the unique items at your favorite store. Now, what can you do with them? Our chefs will answer your questions about TJ’s new products and help you create interesting, healthful meals using them plus seasonal ingredients. The menu will be determined by the instructor based on what is new and fresh at Trader Joe’s. Due to the popularity of this class, we will offer two sessions. The same recipes will be featured; sign up for only one of these sessions.

Instructors: Lisa Scott and T.J. Tramonto. Lisa Scott is a personal chef who has a B.S. in Food, Nutrition, and Dietetics. She has been teaching cooking classes at the adult school for 10 years. T.J. Tramonto is a graduate of Westlake Culinary Institute and a professional caterer.

We are increasingly aware of what we eat. Whether you follow Weight Watchers, South Beach or your own plan, we’d like to show you how to trim some of those fat grams and calories while emphasizing nutritional wholesomeness. It’s easier than you think with some sleight of hand and clever recipes using Trader Joe’s products.

Fun with
Fermented Foods
This interactive class will teach you how to make sauerkraut, kimchi, kombucha and sourdough bread. We will prepare these international delicacies and discuss the health and nutritional benefits of fermented foods. You will learn the science behind fermented foods and understand why and how cultures have been fermenting for centuries.

Instructor: Paul Hudak teaches organic gardening, cooking, health and nutrition at a local school. As a lifelong fermenter, Paul has taught many fermentation workshops and classes at area schools including Occidental College.

Are you ready for some new and improved Thanksgiving side dishes? We are going to be making Pumpkin Shaped Dinner Rolls, Sweet Potato Bake with Sugary Brown Butter Pecans, Spicy Orange and Apple Cranberry Sauce, Garlicky Potato and Celery Root Mash.

Gluten Free 101
Learn how to make delicious, healthy gluten-free meals at home! In this class, we’ll prepare, cook, and eat a three-course gluten free gourmet dinner while learning about the science behind gluten and digestion. We’ll discover why eating a gluten free diet benefits so many with health problems, including those suffering from autoimmune diseases. We’ll explore how to shift to gluten free eating with ease, including reliable gluten free products, pitfalls to avoid, and how to create harmony in a house with both gluten free and non-gluten free eaters.

Pressure Cooking 101
Phyllis Vaccarelli has discovered that you can do most anything in a pressure cooker, faster, more efficiently and with great flavor results. She will show you how easy it is to convert your own favorite recipes to the pressure cooker and prepare them in less than half the time. Today’s pressure cookers are safe, quiet, save energy and preserve nutrients better than other methods of cooking. In this class you will learn how to cook a Butternut Squash Risotto in less than 10 minutes without stirring, a quick Split Pea soup with Ham, Shrimp with Dried Cannellini Beans and Chocolate Pot de Crème with Salted Caramel Whipped Cream for dessert.

Here is another class in our series of classes featuring the pressure cooker. We all know the holidays can be a busy and hectic time of year. It is also a time of year when we make poor food choices based on the lack of time in our days. This class will help us better prepare ourselves for proper health and nutrition during the holidays. We will be making Lemony, Pinot Grigio Chicken with Quinoa and Broccoli and Leftover Turkey, Apple and Quinoa Salad. You will want to add these recipes to your meal planning and prep list.

Under an Hour!
As the trees begin to change colors and the weather cools, time to bring out the soup pots and create easy, delicious meals in no time. Join us as we re-create traditional soups using time saving techniques. We will create a Creamy Chicken and Corn Chowder, Tortellini Soup, White Bean Chili, Beef Barley and Vegetable and a Brie, Cheddar, Apple Beer Soup, each sure to please even the pickiest of eaters!

Instructor: Vicki Smither has taught cooking classes for 7 years and has participated in numerous cooking groups in the U.S.and Europe.
